  1. Prep Cut butter into small pieces and place in bowl to soften.
  2. Chop raisins, capers, and chives.
  3. Zest/grate lemon peel (no white; 1 tablespoon).
  4. Steps Stir raisins, capers, chives, and lemon zest into butter; set aside.
  5. Preheat large sauté pan on medium-high 2–3 minutes. Season salmon with salt and pepper.
  6. Place oil in pan, then add salmon; cook 3–4 minutes on each side or until salmon is 145°F (or opaque and separates easily).
  7. Remove salmon from pan and place on serving platter. Spread butter mixture evenly over salmon. Serve.
